How does the SCA Flavor Wheel work?
The Specialty Coffee Association published its reference Flavor Wheel in 2016: 9 primary categories (Fruity, Floral, Sour, Green, Other, Roasted, Spices, Nutty/Cocoa, Sweet), each broken into precise subcategories. It is the universal vocabulary of Q Graders and specialty roasters worldwide.
How to taste: start with dry fragrance (freshly ground), then wet aroma (hot water steam), finally retronasal olfaction after swallowing — that is where complex aromas reveal themselves.
