Natural mutation of Red Bourbon discovered in Brazil, compact (dwarf) structure. More productive than Bourbon, slightly less complex in cup. Genetic base for many modern hybrids.

Caturra is a naturally occurring compact (dwarf) mutation of Bourbon discovered in 1937 on a farm in Minas Gerais, Brazil. Its most significant characteristic is its reduced stature — Caturra plants grow to 1.5–2.5m rather than the 3–4m of its Bourbon parent — which makes it ideally suited for high-density planting (up to 5,000 plants per hectare vs. 1,500–2,000 for full-size varieties) and mechanical or semi-mechanical harvesting. This productivity advantage made Caturra the dominant Arabica variety in Central America (Costa Rica, Guatemala, Honduras, Nicaragua) and an important variety in Colombia from the 1950s through the 1990s. Genetically, Caturra is a single-gene mutation from Bourbon — it carries the dwarfism gene (CT1) that also appears independently in other compact mutations (Villa Sarchi, Pacas). Its cup profile follows Bourbon closely: balanced sweetness, medium-to-bright acidity, notes of citrus and stone fruit. Caturra's weakness is its susceptibility to coffee leaf rust — the same disease resistance gap that caused mass disease losses in Central America in 2008–2013, a crisis that accelerated adoption of hybrid varieties like Castillo (Colombia) and Lempira (Honduras).
Practical Use
Caturra is an excellent starting point for understanding Central American Arabica flavour profiles — it is widely planted, well-studied, and produces reliable results with proper farming and post-harvest processing. Look for Caturra from Costa Rica (Tarrazu, West Valley) or Honduras (Marcala) for balanced, accessible specialty cups. Cup score range: typically 82–86 SCA points at optimal conditions. In competition, Caturra is frequently selected as a vehicle for demonstrating processing technique — its neutral baseline makes processing innovations (washed, honey, carbonic maceration) clearly audible in the cup.
