Background & Context

Geisha (also spelled Gesha — both refer to the same variety, named after the Gesha forest region of south-west Ethiopia where it was collected in 1931) is an Arabica cultivar that became the defining prestige variety in specialty coffee after a catastrophic outbreak of coffee leaf rust struck Panama's Hacienda La Esmeralda in 2004. Searching for rust-resistant varieties in their seed collection, the Peterson family discovered that a Geisha selection was highly resistant and, crucially, produced a coffee that scored 95.1 at the 2004 SCA auction — far above any previous auction price, selling at $21/pound (a world record at the time). Geisha's distinctive chemical profile is traceable to its Ethiopian forest origin: extreme florality (jasmine, bergamot, violet), intense citrus acidity (bergamot, lime, lemon zest), and an almost tea-like delicacy that differs fundamentally from commercial Arabica cultivars. After Panama's success, Geisha was planted across Costa Rica, Colombia, Guatemala, and Ethiopia.

Practical Use

Working with Geisha requires recognising that its fragility is as distinctive as its flavour. Geisha trees yield 30–40% less than Caturra or Bourbon and are prone to tip dieback in humid conditions — explaining its premium price of $50–200/kg green for the best lots. In roasting, Geisha benefits from very light development (DTR 18–20%) that preserves floral aromatics; pushing darker erases the variety's distinctive character and leaves a generic light-bodied cup. In brewing, Geisha is best experienced as a filter coffee (V60, Kalita, Chemex) at 93°C and 1:15–1:16 ratio, where its full aromatic profile unfolds. Espresso preparation, while spectacular in skilled hands, risks masking Geisha's delicacy with pressure-driven extraction intensity.
