Depulping
Wet processing step (washed) consisting of mechanically removing the cherry pulp to retain only the parchment-covered bean coated in mucilage. First stage after harvest in washed processing.
Background & Context
Depulping is the mechanical removal of the outer skin (exocarp) and pulp of the coffee cherry, exposing the mucilage-covered green bean. It is the first physical step in wet (washed) coffee processing, carried out using a depulper or pulping machine — a drum or disc device that squeezes the cherry so the parchment-covered seed ejects while the skin is retained. Quality depulping is critical: unripe or over-ripe cherries that have not been properly sorted before depulping create higher rates of defective beans. The depulper must be calibrated for the specific cherry size of the variety being processed — a machine set for Caturra's smaller cherries will damage Maragogype's larger fruits, and vice versa. After depulping, the beans — still coated in sticky mucilage — proceed to fermentation tanks (aerobic) or directly to raised drying beds (for honey process, where some mucilage is retained intentionally). The waste stream from depulping — the coffee pulp — is significant: it represents roughly 40% of the cherry weight and must be composted or biodigested to prevent waterway pollution. Many progressive farms in Central America and East Africa now convert pulp into compost returned to the soil, closing the nutrient loop.
Practical Use
The quality of depulping affects the final cup more than most consumers realise. Under-ripe cherries that escape sorting produce 'quakers' (pale, under-developed beans) that roast poorly and create harsh, papery notes. When evaluating specialty coffee at origin or auction, ask about sorting methods before depulping — optical or density sorters before pulping are indicators of a quality-focused mill. Immersion float tanks, which separate floaters (low-density unripe or hollow beans) from sinkers, are the most cost-effective pre-depulping quality gate.
