Roasting defect caused by overly slow development at low temperature. Result: flat coffee lacking aromas, bread or grain taste. Non-recoverable at extraction.

What causes a baked roast, and why is it hard to spot?

A baked roast is one of the most common, and most difficult to detect, roasting defects. It occurs when the bean spends too long in a temperature range that is above caramelisation onset but below the rate of rise needed for proper development, essentially 'stalling' chemically without progressing. The visual cues are subtle: the bean looks adequately roasted, with a normal colour, but the cup reveals the damage. A baked coffee tastes flat, bread-like, or biscuity, lacking both the brightness of a clean light roast and the richness of a properly developed medium. The mechanism: caramelisation and Maillard reactions require not just heat but a certain rate of temperature increase (Rate of Rise, or RoR). When the RoR drops close to zero or goes negative (a 'crash') in the middle phase of roasting, the chemical reactions stall. As James Hoffmann notes in The World Atlas of Coffee, a roast that flattens out during development yields a dull, lifeless cup. The bean colour develops as melanoidins form, but the volatile aromatic compounds that carry fruit, floral, and caramel notes are not synthesised. Agtron measurement is unreliable for detecting baked roasts: a baked coffee and a well-roasted coffee at the same Agtron score taste completely different. The only reliable detection method is cupping.

How do you detect and prevent a baked roast?

If you suspect a coffee is baked, look for these signs: the aroma from the dry grounds is weak or wheat-like rather than floral/fruity; the cup is flat and lacks dynamic flavour; the retronasal finish is brief and bread-crust-like. For roasters: monitor RoR carefully in the Maillard phase (140 to 165°C). A RoR that drops below 3°C/min before first crack is a warning sign. Software tools like Cropster and Artisan plot RoR in real time. Prevention is simpler than correction: maintain charge temperature and airflow consistency.
